Spicy Carrot Salad
This is my take on a popular French salad using shredded carrots. Ingredients: 3 Cups Shredded Carrots 1/2 Medium Red Onion 1 Tbsp Dried Cilantro (Substitute Fresh) Vinaigrette Ingredients: 1 Tbsp Olive Oil Juice Of 1 Lemon 1/4 tsp Crushed Garlic 1/4 tsp Stone Ground Mustard 1/4 tsp Salt 1/8 tsp Cayenne Pepper 1/2 tsp Agave Nectar Directions: In a small bowl, add all the vinaigrette ingredients together and whisk. In a bigger bowl, add the shredded carrot, cilantro and chopped red onion. Add the vinaigrette to the bigger bowl and mix the whole thing together. I can't go to fancy coffee houses because they are pricey and caloric. I do a better job and use better ingredients at home. Here's my healthy version of a nutella latte. Great taste, fewer calories. DIRECTIONS Make the flax egg by combining 1 tablespoon of Ground Flax with 3 tablespoons of water. Let it sit for about 5 min. Put the banana, flax egg, oats, baking powder, and salt into a blender. Purée until smooth like a pancake mixture, then set aside for 15-20 minutes. Cook in a frying pan by pouring the mixture out into small silver dollar pancake shapes. Be careful when you flip the pancakes, these are more delicate than regular ones. This recipe made 3 fluffy pancakes. Combine the rest of the ingredients. Mix well. Roll the dough into small balls and place them on a cookie sheet. Bake for 15 min at 350 F. Pancakes & Cookies SPICY SOUTHWESTERN BLACK BEAN BURGERS INGREDIENTS: 3 - 15 oz Cans Of Black Beans 2 Cups Frozen Corn 1 Flax Egg (1 tablespoon of Ground Flax + 3 tablespoons of Water) 1 Onion 1 Green Bell Pepper 1/2 cup Almond Meal Spices: 1/2 tbsp of Garlic Powder 1 tsp Cumin 1 tbsp Salt 2 tbsp of Cayenne Pepper 2 tbsp of Dried Cilantro DIRECTIONS: Make the flax egg by combining 1 tablespoon of Ground Flax with 3 tablespoons of water. Let it sit for about 5 min. Rinse the black beans and let them dry for a bit. Mix all the ingredients in a bowl, take a potato smasher and gently smash the beans with all the veggies together. I personally like to leave them chunky. Use a burger mold or your hands to make up to 9 burger patties. You can use a little paper to separate the burgers and store them in the freezer. This recipe makes 9 burgers. They freeze well
